How did Singapore’s cuisine inspire our unique Volcano Ramen style?

Kazan, Japanese for volcano, is the fiery inspiration for our signature Tonkotsu Kazan Ramen.

Served in a 400 degree Celsius hot stone bowl, broth is poured into the bowl and covered with a red funnel top. As the ingredients are cooked, piping hot steam erupts from the funnel, creating the famous volcano effect.

Why volcano you may ask? Founded in 2012 and headquartered in Osaka, we were initially amazed to see Singaporeans eating steaming hotpot in the middle of the sweltering summer island heat. Singaporeans continued to enjoy piping hot steamboat, even if they were perspiring in the humid outdoors! This motivated us to create a ramen dish that can be enjoyed by people living in the hot tropical climate.

After two years of research in Osaka, we developed the kazan style of ramen that is has both the umami flavour and fun factor for all to enjoy!

As the broth is poured over the ramen ingredients, your choice of meat and a hearty serving of vegetables are cooked in the fiery heat. The tonkotsu broth is made with rich pork bones boiled over several hours, making it the soup thick and flavourful but not overly oily. The vegetables adds a sweetness to the broth, adding the right balance of salty and sweet to the tonkotsu broth. We’ve specially selected Hakata style ramen noodles from Fukuoka Prefecture, Japan. The straight and thin noodles make are the perfect pairing with the savoury tonkotsu soup. End your meal with a bowl of rice to make zousui (porridge) with the rest of the broth to complete your kazan ramen experience.

We make sure to use natural ingredients with little to no msg. We work with Japanese farmers that supply us with local ingredients so we can bring an authentic ramen experience to Singapore. Get a taste of nippon with ingredients flown straight from Japan, together with our handmade chashu, soup, noodles, and kaeshi sauces.
